Eggington's opens its doors in downtown Casper, offering a small menu of breakfast classics.
Due to growing popularity, we expanded our menu to include lunch options and increased our seating capacity.
Chef David Rodrigues joins our team, bringing his 30 years of culinary expertise and introducing new signature dishes.
New owners take over, also operating Garcia's Mexican Restaurant, ensuring the continuation of Eggington's legacy.

With over 30 years of culinary experience, Chef David Rodrigues brings passion and expertise to every dish at Eggington's. His journey began in traditional culinary training, but his love for breakfast and brunch cuisine led him to specialize in these beloved morning meals.
Chef David is known for his perfect hollandaise sauce, fluffy pancakes, and creative omelet combinations. He believes that breakfast is the most important meal of the day and deserves the same attention to detail and quality ingredients as any fine dining experience.

In 2015, Eggington's welcomed new ownership, who also operate Garcia's Mexican Restaurant and other successful establishments in the area. This transition has allowed us to maintain our beloved traditions while bringing fresh ideas and improvements to enhance your dining experience.
